Dessert Pizza with Chocolate-Cauli Crust

Cauliflower is unique in that it's a low-calorie food that contains almost every vitamin and mineral. Vegan, gluten free, dairy free.

1 tablespoon flaxseed meal
2 tablespoons honey
3 tablespoons granulated sugar
2 tablespoons walnut oil
1 teaspoon vanilla extract
1–1½ pounds cauliflower, cut into florets
1 cup gluten-free oat or almond flour
3 tabelspoons cocoa powder
½ teaspoon baking powder
¼ teaspoon ground cinnamon
¼ teaspoon salt
cup dairy-free dark chocolate chips
2 teaspoons coconut oil
¼ teaspoon vanilla extract
Sliced strawberries
Shredded, unsweetened coconut
4 ripe bananas; peeled, chopped and frozen
2 tablespoons almond or peanut butter
1 teaspoon vanilla extract
Recipe Instructions: 
Place chopped bananas for the Banana Ice Cream in the freezer while prepping other ingredients. Preheat oven to 400˚, and line a baking sheet with parchment paper. In a large bowl, combine flaxseed meal, honey, sugar, walnut oil and vanilla; set aside.
Place cauliflower florets into a foodprocessor bowl; pulse until cauliflower resembles rice. Measure out 2 cups and transfer to a microwave-safe bowl. Cover bowl. Microwave 2½–3 minutes, until steamed. Remove, and let cool.
In a large bowl, combine oat flour, cocoa powder, baking powder, cinnamon and salt. Add flaxseed meal mixture and cauliflower; mix until well combined. Mound mixture in the middle of the baking sheet, and press or roll into a round ¼-inch-thick crust. (TIP: Use plastic wrap or wax paper on top to prevent mixture from sticking to hands.)
Bake crust for 25–30 minutes, or until edges begin to turn golden brown and center dries. Set aside to cool.
Meanwhile, prepare chocolate drizzle: In a small saucepan on the stovetop or glass bowl in the microwave, melt chocolate chips and coconut oil over low heat. When chips are nearly melted, remove from heat and stir in vanilla extract until completely smooth.
In the clean bowl of the food processor, place frozen banana pieces, almond butter and vanilla. Process on high until smooth, scraping down sides.
To assemble pizza, spread banana ice cream over cooled crust. Top with sliced strawberries; then drizzle with chocolate sauce, and finish with shredded coconut. Freeze pizza for 5 minutes or up to 30 minutes. Slice, and serve immediately.
