Cilantro Pepita Pesto

Shake things up with a peppy Cilantro Pepita Pesto. Top on your favorite Mexican fare.

Recipe Ingredient Details: 
2 teaspoons minced garlic
¾ cup finely chopped cilantro (1 bunch)
2 tablespoons fresh lime juice
¾ cup toasted pepitas (pumpkin seeds)
teaspoons coarse salt
¾ cup oil (such as avocado, cold-pressed canola or extra-virgin olive oil)
Recipe Instructions: 
In a food processor, mince garlic and cilantro. Add lime juice, pepitas and salt; pulse until pepitas are finely chopped. Slowly add oil; blend until combined.
